Choosing your wedding cake flavour… a topic very close to our heart.

In case you hadn’t checked out our menu yet, we don’t do boring cakes or flavours at Confetti Cake Co. We love coming up with new combinations and believe our menu is a reflection of our brand and personality. One of our latest additions is our Iced ZoZo flavour - a fluffy coconut cake with toasted marshmallow buttercream and a tangy raspberry puree.

The cake industry has mostly said a very happy goodbye to fruit cake (sorry fruit cake fans!). Recently, even the more modern choice of a luxurious mudcake has had a makeover with options available that are inspired by your favourite candy bar, dessert or even cocktails. We are our finding couples actually gravitating towards lighter cakes and fancy flavour combinations like our London Fog cake - earl grey cake with a burnt toast buttercream and honey caramel sauce or Lemony Snicket - lemon cake with a vanilla buttercream and tangy lemon curd.

1. Not all cake is created equal – do a cake tasting.

The most important thing about your wedding cake is that it actually tastes good. It probably seems really obvious, but after scrolling Instagram, Pinterest and wedding blogs for what feels like forever, sometimes the look of your cake feels like it’s more important than the actual flavour. Don’t be fooled! You want this cake to be delicious. You want this cake to be memorable. It pays to do your research and find a cake decorator who is as passionate about what’s inside the cake, as what it looks like. Surprisingly, there are a large percentage of cake decorators out there who use commercial “packet mix“ which are full of preservatives and artificial flavours. Ask the question early when doing your research… where your cake ingredients are sourced will also make a big difference in how your cake tastes.

Most cake decorators offer wedding cake tastings, whether it’s done as a sit down consultation or a takeaway box. If you and your future husband/wife can’t agree on one flavour, ask if they will let you choose a different flavour for each tier. Confetti Cake Co. offers takeaway Taster Boxes every three months which contain eight cake samples and two bite size favour samples. Zoe, the owner and baker at Confetti Cake Co runs these sessions and will be on hand to answer any questions you have when you pick up your taster box.

2. Accept that you won’t please everyone.

There’s no way you’ll be able to please everyone at your wedding so it’s important to choose cake flavours that make your mouth water and ultimately reflect you as a couple. Don’t let other peoples preferences influence your choice (this probably applies to ALL your wedding decisions!).

We suggest choosing a combination of flavours if possible – a rich, decadent option and a light, fresh option – to cover all your bases… but as I said earlier, don’t let our opinion have any influence on yours, it’s your day!

3. Don’t forget about the buttercream.

We’re on the verge of serious cake-geek territory here but there’s more to cake, than just the cake itself… There are loads of different options when it comes to choosing a buttercream. There’s American, Swiss, French, Italian, Ermine, German… the list goes on! The flavor and texture of your buttercream can change the overall experience so it’s important to try a couple of options before deciding. We offer both Swiss Meringue and American Buttercream and there are samples of both in our Taster Boxes.

Of all the meringue style buttercreams, Swiss Meringue is the only one where the egg whites are fully cooked and therefore safe for pregnant women, kids and the elderly. It is silky, smooth and fluffy and holds up well in the QLD heat. American buttercream is the other buttercream style we offer. It a more traditional combination of butter and icing sugar and we get it super light and smooth before applying liberally to your cake.

4. It’s ok to skip the cake!

If cake isn’t your thing or doesn’t match your style, don’t feel obliged to have one just because it’s tradition. As an alternative, you can consider pies, tarts, cookies, cake pops or doughnuts (our favourite) as an option. What we love more than anything is creating wedding dessert buffets and we suggest allowing two or three small size desserts per person so you can keep even the most picky dessert eaters happy. One thing to keep in mind when choosing a buffet is that they will cost more than a traditional layered cake - sorry! We recommend allowing $10+ per head when working out your budget.

Ultimately, whoever you choose to make your wedding cake and/or desserts, please ensure that they are a licensed Food Business with their local council AND they hold insurance. The Australian Food Safety Act 2006 requires that ALL Food Businesses are licensed and operate in a manner that ensures that food is safe & suitable for human consumption. There are absolutely no excuses or exceptions to this legislation. Keeping you and your guests safe is the most important thing!
